I'm in a bundt cake kick and I'm craving all things spring so I thought this would be the perfect spring flavored bundt. I posted a recipe similar to this one awhile back, but I decided to make a few changes to it and add cream cheese frosting. It's awesome! The cake is so moist and the flavor of the pistachio with the cream cheese frosting is just delicious. I can't decide if I like the flavor of the cake or the color of the cake more. The pistachio green is gorgeous and perfect for any spring, St. Patrick's, or Easter dessert.
