- 1- 14oz. bag sweetened flaked coconut
- 1- 14oz. can sweetened condensed milk
- 1 1/2 teaspoons vanilla extract
- 3 large egg whites, at room temperature
- 1/4 teaspoon kosher salt
preheat oven to 325 degrees. line two cookie sheets with parchment paper.
in a large bowl, combine coconut, milk and vanilla. in a separate bowl combine egg whites and salt and beat with an electric mixer on high speed until medium-firm peaks form when you lift the beaters, about 1-2 minutes. gently fold the egg whites into the coconut mixture.
scoop out cookies onto parchment lined cookie sheets using a cookie scoop. bake for 22-25 minutes or until lightly golden brown. cool.
