Homemade Peanut Butter Eggs

Here is a quick and yummy treat just in time for Easter. I had a lot of fun making these the other day with my two-year-old. And below are links to more yummy Easter recipes!

Homemade Peanut Butter Eggs
  • 1/4 cup melted butter
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • milk (if needed)
  • 2 cups chocolate chips (milk, semi-sweet, or white)
  • 1 Tablespoon shortening
with an electric hand mixer, cream together butter, peanut butter and powdered sugar until a soft dough forms. if dough is too dry add a Tablespoon or two of milk. roll into a ball and place on wax paper. pat into a large circle about 1/2-3/4 inch thick. use a small cookie cutter to cut out shapes. place cut-outs on a plate and put in the freezer until firm, about 10-15 minutes.

place chocolate chips in a glass bowl and microwave for 30 seconds. add shortening and stir. microwave 30 more seconds. stir. microwave an additional 30 seconds if needed and stir. with a fork, dip each peanut butter egg in the chocolate and gently shake off the excess chocolate. place on wax paper or paper plate. you can place them in the refrigerator if you like to help the chocolate firm up.
