Fabulous Mint Brownies

Here is the third bar (brownie) recipe that I made for our family event last week. I chose this recipe because one- it's delicious and two- it makes a lot and we were feeding a ton of people. My mom made these brownies often while I was growing up and they have always been a favorite. I love the fudgey dense brownie and the yummy homemade mint frosting and chocolate glaze, and all three together create a very dangerous combination! And to make these brownies festive for Christmas, you could use red food coloring instead of green in the frosting and sprinkle crushed up candy canes on top. They would be the perfect Christmas party treat!



Fabulous Mint Brownies

  • 2 cups butter, melted
  • 1 1/3 cups cocoa
  • 4 cups sugar
  • 8 eggs
  • 4 teaspoons vanilla
  • 4 Tablespoons corn syrup
  • 3 cups flour
preheat oven to 350 degrees. combine butter and cocoa and mix well. add in sugar, eggs, vanilla and corn syrup. stir in flour until well combined. pour into an ungreased jelly roll pan and bake 20-25 minutes. cool completely. once cooled, frost with mint frosting and chill in refrigerator to set. next, spread on chocolate glaze and return to refrigerator to set. once chocolate glaze is set, cut into squares to serve.

*mint frosting

start with-
  • 1/2 cup butter, very soft
  • 2 cups powdered sugar
  • 1 Tablespoon milk
  • 1 teaspoon peppermint extract
in a medium bowl, combine all ingredients. beat with an electric hand mixer, adding more milk and powdered sugar as needed until you get the perfect creamy consistency. mix in a few drops of green food coloring.

*chocolate glaze
  • 2 cups chocolate chips
  • 12 Tablespoons butter (no substitutes)
combine chocolate chips and butter in a bowl and microwave 30 seconds and then stir. continue microwaving in 30 second intervals just until chocolate is melted and smooth. let sit 15 minutes to cool down and then spread on top of frosting layer.
