Marinated Flank Steak With Caramelized Onions

This dish is really yummy and really easy to make. I like to serve it with steamed asparagus and a spinach salad and then with either garlic mashed potatoes or baked sweet potatoes. So good!

Marinated Flank Steak with Caramelized Onions
  • 1 beef flank steak
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 medium sweet onion
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • crumbled feta or goat cheese (optional)
combine vinegar, olive oil and garlic. pour over steak and marinate in refrigerator for at least 3 hours.

slice onion into rings. heat butter in a skillet and add onions and sprinkle with salt. cook, stirring occasionally, until onion rings are caramelized, about 30 minutes. meanwhile, heat grill or broiler and cook steak for about 8-10 minutes per side. let meat rest for about 5 minutes and then slice thinly, diagonally across the grain. arrange on a platter and sprinkle with cheese and cover with onions.
