Perfect Homemade Chocolate Cupcakes and Creamy Peanut Butter Frosting

A few weeks ago one of my aunts asked me if I had a good chocolate cupcake recipe. She said she had tried several different recipes but didn't like any of them. I told her I didn't have one but that I would be on the lookout. A few days after that I had a friend who asked for the same thing. So I did some searching and I found this recipe and I really like the way that it turned out. It's just a good, basic go-to recipe that you know will always turn out right. When I made these cupcakes I also wanted to make a really good frosting to go with them so I chose this peanut butter frosting that I got from my friend Jessica. The results were simply scrumptious!



Perfect Homemade Chocolate Cupcakes
  • 6 tablespoons cocoa
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups flour
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cups vegetable oil
  • 1 cup cold water
preheat oven to 375 degrees. sift together cocoa, sugar, salt, baking soda and flour. set aside. using a mixer, mix together the eggs, vanilla, oil and water until well combined. slowly add in the dry ingredients and mix until well combined. divide evenly into 24 lined muffin cups and bake for about 16-20 minutes.

*tip: if you don't frost your cupcakes right away, keep them in a ziplock back, it will keep your cupcakes nice and moist.



Creamy Peanut Butter Frosting
  • 6 tablespoons unsalted butter, at room temperature
  • 3/4 cup powdered sugar
  • 3/4 cup creamy peanut butter
  • 1/4 cup heavy cream
using a mixer, beat all ingredients together until smooth and combined. scrape down the sides of the bowl as needed while mixing. use right away.

I am SO, SO excited to try this recipe! I know it's going to be great and I seriously needed a perfect chocolate cupcake recipe. Glad you liked the frosting!
