Chocolate, Chocolate Chip Cupcakes
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup butter, at room temperature
- 1 1/4 cups sugar
- 3/4 cup + 1 tablespoon cocoa
- 3 tablespoons vegetable oil
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup sour cream
- 1/2 cup water
- 2 cups semi-sweet chocolate chips
in a medium bowl, sift together flour, baking powder and baking soda and set aside. in a large bowl, using an electric mixer on medium speed, beat butter and sugar until creamy. scrape down sides of bowl as needed. in a small bowl, whisk together cocoa and vegetable oil and then add to sugar mixture mixing on low speed until combined. on medium speed, add the eggs one at a time, mixing until each is blended into the batter. add the vanilla and beat until well combined. mix in the sour cream and beat until well combined. on low speed, add half of the flour mixture, mixing until just blended. mix in the water and then mix in the remaining flour mixture. stir in chocolate chips with a spatula.
divide batter between muffin cups. bake for 18-20 minutes.
