Chocolate, Chocolate Chip Cupcakes

Ok, so I said that I would post a recipe from the giveaway cupcake book and here it is except I have made a few alterations based upon the ingredients that I had on hand and I also added chocolate chips. I have to say that the results were AMAZING!!! I know that I just recently posted a chocolate cupcake recipe but here is what I think...if you want to make a really thick, rich frosting then you should make the Perfect Homemade Chocolate Cupcakes because those cupcakes are nice and light and will compliment the frosting instead of compete with it. However, if you want the main focus to be on the cupcake then you should make these little gems. They are so soft and dense and I think I actually prefer eating them without frosting. I dusted mine with a little bit of confectioner's sugar and they were just perfect!


Chocolate, Chocolate Chip Cupcakes
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, at room temperature
  • 1 1/4 cups sugar
  • 3/4 cup + 1 tablespoon cocoa
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup sour cream
  • 1/2 cup water
  • 2 cups semi-sweet chocolate chips
preheat oven to 350 degrees. line your muffin tins with cupcake liners to make 24 cupcakes.

in a medium bowl, sift together flour, baking powder and baking soda and set aside. in a large bowl, using an electric mixer on medium speed, beat butter and sugar until creamy. scrape down sides of bowl as needed. in a small bowl, whisk together cocoa and vegetable oil and then add to sugar mixture mixing on low speed until combined. on medium speed, add the eggs one at a time, mixing until each is blended into the batter. add the vanilla and beat until well combined. mix in the sour cream and beat until well combined. on low speed, add half of the flour mixture, mixing until just blended. mix in the water and then mix in the remaining flour mixture. stir in chocolate chips with a spatula.

divide batter between muffin cups. bake for 18-20 minutes.

Where do you get these cute muffin/cupcake cups? I got an unopened package randomly at a yard sale and i just love them. They are similar to yours but they are almost gone. Maybe i'm just looking in the wrong place.

I was there when Valerie made these and they are to die for! I think they would also be awesome with a fudge buttercream frosting or ganache, because you can never have too much chocolate!
