Chicken Tomato Linguine

My husband likes to eat healthy and this is one of his favorite meals. I made this for dinner last night and he said it was so delicious that it tasted like it was from a good restaurant (and when he says 'a good restaurant' he's comparing it to Carraba's which happens to be one of our favorite restaurants!). Now I don't know if it's that good but we both certainly love it! This dish is light and fresh and at the same time very filling. It's the perfect meal if you just want something that's really good without having to worry about adding on a few extra pounds. :)


Chicken Tomato Linguine
  • 1 package multi-grain linguine, cooked according to package directions
  • 3 chicken breasts or you can use thighs, cubed into small pieces
  • olive oil
  • 1 medium onion, chopped
  • 3-4 garlic cloves, minced
  • 1-2 cups fresh mushrooms, sliced
  • 1/2 cup chicken broth
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon sugar
  • 1 28 oz. can crushed tomatoes
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • shredded parmesan cheese
heat a large skillet until it is hot and then generously drizzle in some olive oil. add in the cubed chicken and cook until it's nice and brown. once it has browned, remove from pan onto a plate and set aside.

add a tablespoon of olive oil into the hot pan and then add in the onions, garlic, and mushrooms and stir until mixed well. stir in the chicken broth and then cook until the liquid has reduced by half. add the can of crushed tomatoes and stir to combine. stir in salt, pepper and sugar. reduce heat and let simmer for 15 minutes.

add chicken to tomato mixture and then simmer for another 10 minutes. add parsley and basil and simmer for 2 more minutes. dish up pasta into individual servings and top with chicken/tomato mixture and then garnish with parmesan cheese.
