Perfect Pancakes

Last night my husband and I didn't have time to eat dinner until after 8 and by then we were both starving! We wanted something that was good but most importantly something that would be fast and easy to make....so I decided to make these yummy pancakes. These pancakes are perfectly light and fluffy and I really like the subtle sweet flavor that the vanilla gives them. And a funny coincidence, after we had our pancake dinner, I found out that yesterday was National Pancake Day. So not only are these the perfect pancakes, but we had them on the perfect day!
