Perfect Pancakes

Last night my husband and I didn't have time to eat dinner until after 8 and by then we were both starving! We wanted something that was good but most importantly something that would be fast and easy to I decided to make these yummy pancakes. These pancakes are perfectly light and fluffy and I really like the subtle sweet flavor that the vanilla gives them. And a funny coincidence, after we had our pancake dinner, I found out that yesterday was National Pancake Day. So not only are these the perfect pancakes, but we had them on the perfect day!

Perfect Pancakes

  • 3 cups plus 2 tablespoons cake flour (for best results, do not substitute)
  • ½ teaspoon salt
  • 3 tablespoons baking powder
  • 2 tablespoons sugar
  • 2 cups milk
  • 2 whole large eggs
  • 3 teaspoons vanilla
  • 4 tablespoons butter
mix together dry ingredients in large bowl. mix together milk, eggs, and vanilla in a separate bowl. add wet ingredients to dry ingredients, stirring very gently until just combined. melt butter and add it to the batter, stirring gently to combine. cook on a greased skillet over medium-low heat until golden brown.
