Prime Rib

A few years ago my mom started the tradition of serving prime rib for our Christmas Eve dinner. I've really enjoyed this tradition because it's nice to have something completely different from Thanksgiving turkey and most importantly it's incredibly good! If you've never bought prime rib before, a really good place to get it is from the butcher at Costco. This rub recipe is really great because it's simple and easy but very delicious!

Prime Rib

  • 1 (8-10 lb.) prime rib eye roast (boneless)
  • 1 tablespoon dried rosemary leaves
  • 3 garlic cloves, crushed
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

preheat oven to 350. place beef, fat side up, on rack in roasting pan. combine ingredients and press evenly into beef. do not add water or cover. roast until meat thermometer inserted into center of beef registers 150 for medium, about 15-20 minutes per pound. remove roast from oven and let stand for 15 minutes before slicing or serving.
