- 1 (8-10 lb.) prime rib eye roast (boneless)
- 1 tablespoon dried rosemary leaves
- 3 garlic cloves, crushed
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
preheat oven to 350. place beef, fat side up, on rack in roasting pan. combine ingredients and press evenly into beef. do not add water or cover. roast until meat thermometer inserted into center of beef registers 150 for medium, about 15-20 minutes per pound. remove roast from oven and let stand for 15 minutes before slicing or serving.
