Oven Denver Omelet

This is a really yummy, light and fluffy omelet casserole. We traditionally make it as part of our Christmas breakfast each year but it's so simple to make that I think it would be great to make for any Saturday or Sunday breakfast. If you ever make ham for dinner and have leftovers, then save it and use it in this dish for breakfast the next morning! 


Oven Denver Omelet
  • 1/2 cup half-and-half cream
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded swiss cheese
  • 1 cup finely chopped cooked ham
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green pepper (optional)
in a bowl, beat the eggs and half-and-half cream until light and fluffy. stir in the cheeses, ham, onion and green pepper. pour into a greased 9 inch square or oval baking dish. bake at 400 degrees for 25 minutes or until golden.
