Homemade Chicken Noodle Soup

This is another delicious recipe that I got from my friend Aly. I made this last night and instead of baking the chicken myself, I bought a rotisserie chicken from the grocery store and shredded it up to put in the soup. The shredded rotisserie chicken along with the homemade noodles gave the soup a "Kneaders" feel (for those of you who have never been to Kneaders you are missing out!) and it was so good that I'm going to make it that way from now on. So thanks Aly for another great recipe!



Homemade Chicken Noodle Soup
  • 2 cups cooked chicken, cubed
  • 2-3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 5 cubes chicken bouillon
  • 2 bay leaves
  • 1 teaspoon parsley flakes
  • pepper to taste
place all of the ingredients in a large pot and add water to cover everything. do not add too much water or the broth will be too watery. simmer until the vegetables are tender. ingredients can also be combined and cooked in a crock pot.

*homemade noodles:
  • 2 eggs
  • 1 teaspoon salt
  • 2 tablespoons butter, melted
  • flour
combine the eggs, salt and butter. add flour until the dough is not sticky. roll the dough out very thinly and slice thinly into lengthwise noodles. if the noodles are too thick they won't cook all the way through and will be a little doughy which I actually don't mind :). add the noodles to the soup and cook for 5 minutes.
