The Inn Dinner Rolls

This is another recipe that I got from my mom and she has been making these rolls for years. I made them by myself for the first time last week and they were actually easier to make than I thought they would be. My cute husband wanted to watch me make them because he grew up watching his mom make crescent rolls. He even helped me out by telling me to use a pizza cutter to cut out the rolls instead of a regular knife. It was amazing how much easier it was using the pizza cutter!
The Inn Dinner Rolls
  • 2 1/2 tablespoons dry yeast
  • 2 cups warm water
  • 1/3 cup sugar
  • 1/4 cup butter, softened
  • 1 tablespoon salt
  • 1/2 cup dry milk powder
  • 1 egg
  • 6 1/2 cups flour

in mixer combine yeast and water. let stand 5 minutes. add sugar, butter, salt, dry milk, 2 cups flour and egg. beat together until very smooth. add 2 more cups of flour, one at a time, until smooth. add one more cup of flour, 1/2 cup at a time until it is well mixed in.

turn dough onto a lightly floured surface and knead until it is smooth and satiny. gather dough into a ball and place into a greased bowl. cover and let rise in a warm place until double in size.

use the last of the flour as needed on the board for rolling and shaping the dough. cut or mold into desired shapes. place on baking sheets or pans. brush surface of rolls with melted butter. let rise in a warm place until double in size.

bake at 400 degrees for 15-20 minutes or until browned to your satisfaction. makes about 2-3 dozen rolls.

*for crescent shaped rolls:

divide dough in half. roll one half into a large circle, about 1/4 inch thick. cut dough into 16 pieces, like a pie. roll up each piece starting at the large end, wrapping point around the roll. place on baking sheets, 4 across, 4 down. repeat with second half of dough.

Au Gratin Potatoes

This is one of my mom's recipe's and I love it because it's easy to make and very delicious. It goes really great with the Chicken Cordon Bleu recipe that I posted last time.

Chicken Cordon Bleu

My mom got this recipe from the Lion House cookbook and she has been making it for years. It is a great recipe for Sunday dinner and I like to serve it with Au Gratin Potatoes. My next post will be the recipe for the potatoes.
Chicken Cordon Bleu
  • 4 chicken breasts
  • 8 thin slices cooked ham
  • 4 slices swiss cheese, cut into fingers about 2 inches long and 1/2 inch thick
  • salt and pepper
  • rosemary or thyme
  • 1/4 cup melted butter
  • 1/2 cup cornflake crumbs

pound out chicken breasts with mallet. salt and pepper inside of chicken and sprinkle on rosemary or thyme. wrap cheese with ham. wrap seasoned chicken around the ham and cheese. dip each in melted butter and roll in crumbs. bake at 400 degrees for 45 minutes.

Chocolate Chip Pound Cake

If you love chocolate cake, chocolate chips, and chocolate drizzle or if you just love chocolate period, then you will love this cake! My husband who only eats sweets on Saturdays (he's crazy I know!) had a few bites of the leftovers this morning with his breakfast so I know I'm not the only one who has a hard time resisting this cake. I like to serve it warm with vanilla bean ice cream and it tastes amazing! - ------

Easy Fresh Baked Salmon

My husband really likes to eat healthy and he loves fish so I am always looking for good fish recipes. I'm pretty picky when it comes to eating and preparing seafood but I like this recipe because it is really simple and has a nice fresh flavor. It's also very healthy so it gets my husband's approval!

Pumpkin Brownies with Cream Cheese Frosting

Chicken Corn and Broccoli Chowder

Growing up it was a tradition for my family to have this soup every year on Halloween. Now that I have my own family, I have decided to carry on this tradition and so I made it this year for our big Halloween party. This soup is so incredibly good that even though I quadrupled the recipe for our party, there was nothing left in the end! This is definitely the perfect meal for a cool fall night! -
