Chicken Cordon Bleu

My mom got this recipe from the Lion House cookbook and she has been making it for years. It is a great recipe for Sunday dinner and I like to serve it with Au Gratin Potatoes. My next post will be the recipe for the potatoes.
Chicken Cordon Bleu
  • 4 chicken breasts
  • 8 thin slices cooked ham
  • 4 slices swiss cheese, cut into fingers about 2 inches long and 1/2 inch thick
  • salt and pepper
  • rosemary or thyme
  • 1/4 cup melted butter
  • 1/2 cup cornflake crumbs

pound out chicken breasts with mallet. salt and pepper inside of chicken and sprinkle on rosemary or thyme. wrap cheese with ham. wrap seasoned chicken around the ham and cheese. dip each in melted butter and roll in crumbs. bake at 400 degrees for 45 minutes.
