Teriyaki Pork Roast

This is a great crock pot recipe that I got from my mom. It's so nice because it only takes about 5-10 minutes to prepare and then you can just leave it to cook in the crock pot all day long. The meat is so tender from slow cooking all day and I love the teriyaki flavor. I like to serve mine with homemade fried rice (http://kukikookbook.blogspot.com/2009/01/fried-rice.html) and then either edemame, broccoli, or mixed oriental vegetables. -

Teriyaki Pork Roast

  • 3/4 cup apple juice
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 lean boneless pork loin roast, about 2-3 lbs (I like to buy mine at Costco)

place pork roast in crock pot. mix the other ingredients together and pour over pork. cook on high for 4 hours or on low for 7-8 hours.

after removing roast from crock pot, strain the liquid and use as a sauce for the meat.

serve with fried rice, edemame, broccoli, or mixed oriental vegetables.
